Spent $450 on a used convection oven, six months later it paid for itself
Back in March I grabbed a used Blodgett from a restaurant supply place near Columbus for $450. My old range could only do one sheet pan at a time and the heat was all over the place. With this thing I can crank out 6 pans of sheet cake or two trays of roasted veg at once, and my Friday prep time dropped by almost 2 hours. Anyone else find that a big equipment buy ended up being cheaper than the labor it saved, or did you get burned on a lemon?

Man, that's a solid deal if it actually holds up for you... but I gotta say, I've seen people get burned way worse than that on used commercial gear. My buddy grabbed a "refurbished" convection oven from a dealer once, and it died three weeks in because the wiring was all messed up. Those repair bills ate up every penny he saved on the price, plus some. Yeah, the labor savings are real if it runs right, but you're basically gambling that the previous owner didn't beat the hell out of it. Hopefully yours keeps kicking for years, but I'd keep the receipt for a backup plan close by.
