Pro tip: skip the cheap deli slicer and rent a Hobart for a weekend instead

I saved $200 buying a $300 home slicer for our pop up kitchen in Austin and after it jammed on 3 pounds of prosciutto I drove to a rental place at 6 AM on a Saturday to get a real one, anyone else burned money on gear that just couldn't keep up with actual service volume?

Did you try explaining to the prosciutto that it was on a budget, because maybe it would have cooperated? I still have nightmares about the time my "commercial grade" hand mixer tried to konk out on a batch of buttercream and ended up painting my kitchen walls white.

Buttercream explosions are a rite of passage lol. Next time try chilling your bowl and beaters for 15 minutes before you start, it gives the mixer way less resistance. Also keep the speed lower until the butter softens up, high speed from the get-go is asking for trouble.
