Lost 2 servers on a Friday double, now I check the low boy gaskets every single shift
Walked in at 4pm to 85 degrees in both units, $1,800 of halibut and scallops gone before the dinner rush even started. Has anyone else had a gasket go bad without any warning signs at all?
Gaskets almost never just fail out of nowhere, they give you little clues for weeks if you know what to look for. A tiny bit of condensation, a door that needs an extra nudge, a weird smell in the morning, all of that is the unit telling you it's about to quit on you. Checking them every shift is fine but you might be fixing the wrong problem, because half the time the real issue is a hinge or a warped frame that's slowly destroying the seal.
