Watched my own "tell" fly right past me last week when I high fived Manny after a clean rush and then dropped an entire tray of silverware in front of the whole dining room, so maybe my tell is just when I stop bleeding and start laughing about it. Honestly though, 212 plates in three hours with no ticket over eight minutes is not luck, that is two people reading each other without talking. When the window stops feeling like a fire drill and starts feeling like a dance, that is when you know the line is locked in. The grin at 10:15 says it all, because you only get that feeling when the rush runs you and you still win.
