Hit 500 covers solo on a Saturday night last month

Honestly never thought I'd pull that off without a second saute cook. We did it with a prepped mise and one induction burner as backup. Anyone else hit a crazy number like that and just felt the rush?

Did you charge double for the "spicy induction burner show" or was that just free entertainment? lol. 500 covers solo is wild but I bet your right arm is still sore from all that plating.

Is it just me or does every big achievement in a kitchen just make you realize how much we rely on muscle memory and pure adrenaline? That rush after the last ticket drops is like nothing else, but the next day your whole body reminds you you're not 22 anymore.
