Hated using a thermometer on my cast iron for years, finally tried it
I always thought I could tell by feel when my pan was hot enough for searing. Last Wednesday I actually temped it before dropping in a steak and my "ripping hot" pan was only 375F. Now I check every time and my crusts are way better.

Same here. Thought I was getting it screaming hot but it was barely 400. Game changer.

My buddy Mike uses one of those infrared temp guns on his smoker all the time. He found out his cheap thermometer was off by almost 50 degrees.
