A plumber's throwaway line made me rethink my miters

I was on a job in Austin last month and this plumber watched me fight with an outside corner for ten minutes. He said 'you're measuring the wall, not the reality of the wall' and walked off. Since then I've been checking for square on every surface before I cut, but it's slowing me down. Anyone else trust their level more than the framing in older houses?
