Vent: tried to stretch a $20 roast into 5 meals and ended up eating bean soup for 3 days straight
I was in my tiny kitchen in Austin last Tuesday, thought I could make that 1.5 pound chuck roast from HEB feed me all week, but by day two it was gone and I had to dump a whole can of black beans into the leftover broth just to have something for dinner, has anyone else had a budget meat plan totally backfire like that?

The math on that "stretch a roast" plan never works out the way you think it will. That first meal is glorious and then you're basically eating ghost meat flavored broth for the next four days. Bean soup on day three is a real sign that you've hit the bottom of the grocery budget barrel. At least you got creative with the black beans instead of just drinking the watery leftovers straight from the pot. Next time just buy two roasts or admit defeat and get a $5 rotisserie chicken that actually lasts. Your wallet is lying to you if it says one pack of meat can feed a whole week.
