Unpopular opinion: I was buying the wrong cut of chicken for years

I always grabbed boneless skinless breasts because I thought they were the 'healthy' choice, but my receipt from last week showed I spent $12 on just two of them. My butcher finally told me to get a whole chicken and break it down myself, it's half the price. Anyone have tips for using the back and wings in a cheap soup?

Yeah, that switch to a whole chicken was a game changer for my budget too. I do exactly what @the_wesley said, the back makes the best stock for a simple soup. After I simmer it, I pick any little bits of meat off the back to add in, then throw the wings in the pot to cook through. It makes a really filling meal with just some noodles or rice and whatever veggies are cheap.

My old roommate from college, Dave, was a total chicken wing fanatic. He'd buy those big party packs and just roast them with salt and pepper every Sunday. The smell drove me crazy, but he'd save all the bones in a bag in the freezer. Once a month, he'd boil them down into this super rich broth and make the simplest potato soup. It was honestly the best part of living with him.

My grandma always used the back for stock, just simmer it with some onion and celery.
