Took me 4 months to realize frozen veggies beat fresh for my budget meal prep
Everyone in here always raves about buying fresh produce and cooking it same day. I tried that for so long. I would hit the farmers market every Saturday in Austin, spend like $35 on greens and peppers and stuff, then by Wednesday half of it was sad in my fridge. I threw away so much money it made me mad.
Finally I just switched to frozen bags. I know people say fresh tastes better, but honestly for soups, stir fries, even roasted veggie trays I cant tell the difference. A 2 pound bag of frozen mixed veg costs like $2.50 at HEB and lasts me two weeks. My stir fry nights went from $8 a meal to maybe $3.50. The only thing I still buy fresh is onions and garlic because frozen ones get weird.
It took me 4 months of wasting probably $60 total before I stopped being stubborn about it. Has anyone else fought the fresh veggie battle and switched over? Or do you have a system to actually use fresh stuff before it goes bad, because I could never get it right.
