My view on cheap cuts of meat completely shifted

I avoided them for years thinking they were tough. Slow cooking transforms them into tender, tasty dishes. A pork shoulder now feeds my family for days.

Honestly, I've had the opposite experience. Even with slow cooking, I still find a lot of those cuts end up with a weird texture, like it's tender but also kind of stringy and greasy. All that fat and connective tissue doesn't always break down the way people say it will. It just makes the whole dish feel heavy and leaves a film in your mouth. I've given up on them and just save for the better cuts, less hassle and way more enjoyable to eat. Do you ever get that, or does it always work perfectly for you?

It can be hit or miss, but calling it heavy with a film seems over the top. Maybe your slow cooker runs too hot?

That point about slow cookers running too hot is worth considering. Even models from the same brand can vary a lot in actual heat (it's a common problem, really). Checking with a kitchen thermometer could help figure out if yours is cooking hotter than it should.
