Meal prep at a gas station changed my whole system

Stopped at a Love's in Ohio last month and saw a trucker making a full rice and bean bowl in the parking lot with a portable stove. I used to spend $70 a week on grocery basics, now I'm thinking about copying his setup, but is cooking in a parking lot really practical for regular folks, or just a road warrior thing? Anyone else tried this?
