I tried using a $2 bag of frozen peas as the main veggie for a whole week
It cut my grocery bill by about $15 and honestly, you can mix them into pasta, soup, or rice and they work fine. Has anyone else tried a similar 'single veggie' week to save cash?

Yeah, frozen peas are a solid choice. I did a week with just frozen broccoli florets. Threw them in scrambled eggs, mixed them into boxed mac and cheese, and roasted a whole sheet pan with some garlic powder. It's boring, but it works when you're trying to stretch things out.

Wait, frozen broccoli in scrambled eggs? That's gonna make your eggs super watery. I tried that once and it was a soggy mess. You gotta cook the broccoli first, like microwave or pan fry it to get the moisture out. Then add it to the eggs right at the end. Makes a huge difference, trust me.
