I finally tried cooking with canned lentils and it actually worked

I've always been weird about canned beans and lentils, figured they'd be mushy or taste like the can. But last Tuesday I was out of dry lentils and had $3 left for dinner, so I grabbed a can for 89 cents at Aldi. Rinsed them good, threw them in a curry with some frozen spinach and coconut milk from my pantry. Honestly, the texture was fine and it saved me like 40 minutes of boiling dry ones. Anyone else had a success story with canned stuff they were skeptical about?

oh man, I was the same way about canned beans and lentils for the longest time. I thought they'd be all mushy and weird... then I tried them in a soup once when I was in a pinch. it actually worked better than I expected, and I felt silly for being so stubborn about it. the rinsing really helps, like you said. and yeah, saving that extra time is legit, especially on a weeknight when you just want dinner done.
