I finally figured out the real trick to cheap chicken dinners

Last month I bought a whole chicken for $7 at the store in town and roasted it, but we only ate half. The next day I boiled the bones with an old onion and some pepper to make stock, then used that and the leftover meat to make a huge pot of soup with cheap rice and frozen veggies. What's your best 'stretch the meat' trick for a family?
