Can we talk about my potato bargain that almost went bad?
I grabbed a 20-pound bag of potatoes on sale for just a few bucks. (I know, right?) But then they all started sprouting at once, and I thought I'd wasted my money. I had to get creative fast to use them up before they went bad. So I made a giant pot of potato soup, then oven fries, and even breakfast hash with leftover veggies. Turns out, we ate for almost a whole week on just those potatoes and some pantry staples. That was a big win for my grocery budget, and the kids didn't even complain.

Lol was it really a potato emergency or just Tuesday? Making soup and fries from cheap spuds is just normal cooking, not a survival story.

See, that's missing the point though. Sometimes cheap spuds are all you have left in the cupboard at the end of the month. Calling it an "emergency" is just being real about how tight things can get. It's not about making it a survival story, it's about admitting that's all there was to eat. You ever had a week where dinner hinges on a five pound bag of potatoes?
