Tried to bake sourdough during that humidity spike last week and my starter turned into a gray sludge overnight
I left it on the counter like always. 78% humidity according to my little gauge. Next morning it looked like something from a swamp. No mold, just gray and smelled like acetone. Had to toss the whole jar. Anyone else's starter freak out when the weather shifts suddenly?

Woah, that acetone smell is a sure sign of a stressed starter. Did you happen to check what temp your kitchen was when you went to feed it?

Right there with ya, my kitchen's running a hot sauce factory apparently.
