Pro tip: Check your baking powder before you bake anything

Last weekend I tried making blueberry muffins in my mom's kitchen and they came out flat as pancakes. I checked the baking powder and it expired 8 months ago. Drove to the store, bought a fresh can, and the second batch rose perfectly in 12 minutes. Has anyone else had a recipe fail just because of old leavening?

That's a good tip, but I gotta gently push back on the "12 minutes" timing for blueberry muffins. Most muffin recipes I've seen take closer to 18-22 minutes in the oven, you know? 12 minutes would probably leave them gooey in the middle unless you're making mini ones. The baking powder part is totally spot on though. I had a batch of scones fail once because the powder was old, and I was so confused why they didn't puff up. Just thought I'd mention the bake time thing so nobody ends up with raw dough!

Did you check if your oven runs hot, cause that can easily cut 5 minutes off most muffin recipes?
