Twice daily feedings really kick the yeast into overdrive (it’s like they hit the gym). You basically woke up the sleeping beast and now it’s unstoppable, just keep that discard pile under control.

Wait, are you saying I could've just fed my starter more instead of whispering motivational quotes to it for a week? My discard jar is already taking over the fridge and I swear it's plotting something. Guess I better start a side business selling sourdough bricks to make room for the incoming explosion. At least now I know why it went from looking like sad grey paste to bubbling like a science fair volcano.
