My sourdough starter turned into a science experiment and I almost threw it out
After three days, my starter at home in Denver was just this grey, smelly liquid that looked like a failed chemistry project. I was ready to dump it down the sink, but then I read that the smell and liquid are just signs it's hungry and needs consistent feeding. I stuck with it for another week, feeding it 100 grams of flour and water every morning, and now it passes the float test. Has anyone else had a starter that looked dead but came back with a simple routine change?

Day 3 is always the worst with starters, I swear that grey liquid phase makes everyone panic. It's funny how so many things in life are like that, you push through the ugly middle part and suddenly it all clicks. Most people quit right before things start working, whether it's a starter or learning a new skill.

Man "the ugly middle part" is such a perfect way to put it. I've seen it with my buddy trying to learn guitar, he got past the first few chords and sounded awful for like two weeks straight. Then one day he just kinda... got it. Same with my mom's sourdough starter, she almost tossed it on day 4 cause it looked like swamp water. Now she's giving loaves away to everyone. It's weird how that phase is almost a test to see who's really gonna stick with it.
