My sourdough finally got that ear after I stopped obsessing over steam

Turns out my $15 spray bottle was doing nothing compared to just leaving a cast iron pan of boiling water in for the first 15 minutes, and after 4 failed loaves last month I switched and got the best oven spring of my life, has anyone else ditched the fancy gear for the dumb simple trick?

Cast iron pan of boiling water is the only thing that ever worked for me too. Spray bottles just make the oven foggy and wet the crust, not the dough. I do the same trick but I leave the empty cast iron in the oven while it preheats, then pour the water in when I load the bread. That extra heat makes steam like a commercial oven. Fancy cloches and lava rocks are just hype, a cheap pan and hot water beats all of it.
