My sister told me my cookies were "bricks" and I had to rethink everything
Last month my sister tried one of my chocolate chip cookies and said they tasted fine but were like eating a brick. That hit hard because I thought I had my recipe down. She pointed out I was overmixing the dough until it was super stiff, which is apparently what toughens the gluten. I started creaming the butter and sugar for less time and stopped mixing once the flour just barely disappeared. Also switched from a metal spoon to a silicone spatula for folding. The batch I made after that came out so much softer and fluffier. Has anyone else had a family member give them some brutally honest feedback that actually helped?
