My grandma's kitchen in Toledo smelled like bread every Sunday, and I can't get my apartment to do the same
Went back to Toledo last month and stood in my grandma's old kitchen while my aunt made her rolls. She just dumped flour on the counter, no measuring cups, and that whole room filled up with that warm yeast smell in maybe 20 minutes. My place in Columbus has a nice oven and a proofing setting and I still get hockey pucks half the time. It hit me that she never once used a recipe card, she just knew the dough by feel from doing it every week for 40 odd years. So what actually makes dough rise right, the room temp, the water temp, or just doing it over and over until your hands know?
