My first attempt at sourdough finally worked after 8 tries

I've been trying to make a decent sourdough loaf since January and it has been a disaster every time. My starter kept dying or my bread came out like a hockey puck. But yesterday I pulled a loaf out of the oven that actually had a nice crust and soft inside. Has anyone else struggled with getting the hydration ratio right for sourdough?

@riverknight, do you think the grey color could be from over-fermentation or something in your water?

Hydration ratios drove me crazy for months. Ended up using a kitchen scale to measure water by grams instead of cups and that helped a ton. Still can't figure out why my sourdough sometimes gets a weird grey color though.

Strange how the same flour can act totally different from batch to batch.
