My cake layers were always lopsided until I saw a random comment about using wet paper towels

I was baking a birthday cake for my friend in Austin and the middle layer kept sliding off because it was uneven. I wrapped the outside of my cake pans with wet paper towel strips before putting them in the oven, and it actually baked perfectly flat for once. Has anyone else tried this weird hack or have a better method?

That trick works great, but careful with the wet towels. They can make the outside edges bake too fast and get tough.

Good point, @cole_miller. Maybe try a pan of water on the rack below instead. That keeps the steam even without the towel risk.

Are you sure about the water pan being better? I've tried both ways and found the towel method gives a much more forgiving environment for the bread. The steam from a pan of water tends to condense on the top of the loaf too much for me, making the crust gummy instead of springy. And with the towel trick, you just have to make sure the towels are wrung out really well - almost dry to the touch, not soaking. That way you get the humidity without the direct moisture on the dough itself. It's a delicate balance but once you get it right, the results are hard to beat.
