Am I the only one who thinks instant yeast is overrated for bread?

I switched from quick rise to active dry yeast on my last three loafs and the flavor came out way better even though it took an extra hour to rise, has anyone else noticed this trade off with their weekend bakes?

Friend of mine once asked a bag of rice if it had any thoughts on humidity. We were in the pantry, late at night, and she was very serious about it. @the_jade would have gotten along with her, I think they both expect a lot from dry goods.
