Was dead set against sourdough starters at first
My neighbor in Portland gave me a cup of her 3 year old starter and after one loaf I threw my commercial yeast in the trash, anyone else have a starter that changed their whole approach?

and honestly once you get that starter going it just becomes part of your routine like checking your phone in the morning. I feed mine every other day and it's basically a low maintenance pet that gives you free bread. The flavor difference is night and day too, my sandwich bread actually tastes like something now instead of just being a vehicle for mayo. Plus if you mess up a batch you can always revive the starter from the fridge, can't really do that with a packet of yeast.
