My sourdough starter went completely flat on me last Tuesday, right before a big order.

Yeah it is. If you ignore a sluggish starter for too long it can go moldy or turn into hooch. I'd do what Shane said - dump half, feed it warm water and flour twice a day for a couple days. Keep it in a warm spot around 75-80 degrees. That's pulled mine back from the edge more than once. Just don't let it go longer than 12 hours between feedings until it perks up.

My starter did that once. Fed it twice a day for 48 hours with warm water. Came back strong.
