Boiled my bagels for 2 years before realizing I was doing it wrong
Man I felt dumb when this hit me. I always boiled my bagels for like 60 seconds each side, thought that was the standard. Then a friend from Montreal watched me do it and asked why I was making them so chewy tough. Turns out 30 seconds per side is plenty if your water is actually bubbling hard. I learned the hard way after 2 years of hockey puck bagels that everyone politely ate. Anyone else have a technique they stuck with way too long before someone corrected em?

TWO YEARS of hockey puck bagels? Man, that's brutal. I had a friend who used to bake her bread at 450 degrees for an hour because her grandma's oven ran cool, and she never adjusted. Like three years of charcoal loaves before her husband said something. Bagels are already dense on purpose, so you must have been getting jaw workouts for breakfast every day. Props to your friends for not saying anything sooner, that's real loyalty or real fear of your reaction. I'd have been so salty if someone finally told me after all that time.
