My neighbor told me to stop washing my eggs and I thought he was nuts...
He said the bloom was the whole point and after 3 weeks of storing unwashed eggs on the counter with zero spoilage I had to admit he was right, anyone else skip the rinse now?

Actually keeping the bloom intact changes the whole bacteria dynamic compared to washed eggs. Those porous shells are sealed by nature for a reason and washing strips that protection away fast. Rest of the world stores eggs on the counter and they do fine, it's just us Americans that got brainwashed into refrigerating everything.

Oh totally @sams25, you'd think I was committing a crime the first time I left eggs out after moving to Europe and my mom nearly had a heart attack on FaceTime. Guess my American fridge is just a glorified shrine to my irrational fear of salmonella now lol
