Tried preheating my air fryer for 10 minutes before putting wings in versus just tossing them in cold - got wildly different results.

The cold start gave me rubbery skin while the preheat came out crispy, but then I tried the same test with frozen fries and the cold start actually worked better - has anyone else found that preheating only helps for certain foods?

Wait, you got rubbery skin from a cold start with wings? ... that's wild to me because everyone always says the cold start is better for chicken. I guess it makes sense though, preheating gives that initial blast of heat to crisp up the skin real fast. Never would've guessed fries would be the opposite though, that's a total flip on what I'd expect.

The 10 minute preheat is actually the SWEET spot for wings in my experience. I did 8 minutes once and it wasn't enough, then 12 minutes and they almost burnt on the outside. Frozen fries work better cold because they need time to thaw and steam cook through first before that final crisp. Wings don't have that moisture issue, they just need that immediate high heat to lock in the juices.
