Seven minutes at 375 is the problem right there. My sister in Nampa did the same thing and hers came out like hockey pucks. Try 320 for about 9 minutes, then let them sit in there for another minute with the drawer closed. The lower heat is what keeps them soft, the high heat is what turns the whites into rubber. Add a tiny splash of water to the basket before you start, the steam helps too. Your neighbor will still eat four, she just won't have to chew so hard.
