Wait, cornstarch? That's the secret? I always just blasted them with oil spray and hoped for the best. It makes so much sense though, it's like giving them a little crispy jacket. I need to try this on my next batch of those crinkle cuts. The outside gets so much better.

Crinkle cuts are actually the worst for this method, the ridges make the coating uneven. Better luck with straight cut or steak fries.
