Appreciation post: That weird frozen cauliflower I bought on a whim

I grabbed a bag of frozen buffalo cauliflower bites at Aldi last Tuesday, totally skeptical since I've burned through 3 air fryer recipes that flopped. But after 12 minutes at 400 and a shake halfway, they came out crispy on the outside and soft inside. Honestly better than wings. Anyone else have a surprise hit from the freezer aisle?

Read cauliflower absorbs way less oil than old school frozen veggies.

Honestly, that's interesting but it makes me wonder about the prep work. Are you talking about fresh cauliflower that you chop and roast yourself, or the pre-riced stuff in bags? Because I feel like the moisture content in fresh versus frozen cauliflower is totally different, and that would change how much oil it soaks up. Frozen veggies always have that ice glaze on them that steams off first, so maybe that's why they need more oil? Not trying to argue, just genuinely curious how you're testing that.
