Am I the only one who thought air fryer salmon was a bad idea?

I used to think salmon in the air fryer would come out dry and tasteless. But after trying it with a simple marinade (just soy sauce and a bit of honey, you know), it turned out perfectly moist and crispy on the edges. Now it's my go-to weeknight dinner because it cooks so fast and clean-up is a breeze. Honestly, I was totally wrong to doubt it.

Totally get where you're coming from, I had the same worry at first. What @jake_harris22 said about the sugar in the glaze sealing things in makes so much sense now that I've tried it. That little bit of honey with the soy sauce doesn't just add taste, it actually creates that perfect crispy layer while the inside stays soft. It's one of those things you just have to trust until you see it work. Really glad you gave it a shot and it changed your mind too.

Yeah that soy sauce and honey mix is key. Heard a chef say once the sugar in the glaze is what makes it crispy without drying out. It kind of seals in the juice. I stuck to that rule and mine never comes out dry now. Totally changed my mind on air fryer fish too.

But does sugar really crisp, or just make it taste good?

All this talk about sugar sealing in juices sounds overblown. @theascott has a point about whether it's just for taste. People really overthink a simple piece of fish, don't they?
