Air fryer hack I picked up at a diner in Tulsa last month
I went to this old school diner in Tulsa called The Brook and noticed their fried chicken was crazy crispy without being greasy. I asked the cook about it and he said they toss the breaded pieces in a little cornstarch before frying. Tried it in my air fryer at 375 for 12 minutes and it made a huge difference. Has anyone else messed around with adding cornstarch to their air fryer coating?

Heard about this from my friend Sarah who runs a little food stand at our farmer's market. She was going crazy trying to get her air fryer chicken to hold up during busy lunch rushes. Told me she tried adding cornstarch after seeing it on some cooking blog and it totally changed her recipe. Now her chicken stays crispy even when she has to stack it in the warmer trays. She swears by it for her wings too, says it gives them that extra crunch without drying out the meat. I tried it at home last week with some drumsticks and honestly I was shocked at how much better they came out.

Hey @cora_martinez, did Sarah have to mess with the cooking time or temp when she added cornstarch? I tried it with thighs and they came out great but I kept second-guessing myself on the timer (you know how that goes).
