A guy at the kitchen store in Boise told me air fryer baskets lose 20% of their room when you crowd them, so I tested it
I was poking around a kitchen store in Boise last weekend and the guy working there said crowding an air fryer basket can cut the usable cooking area by about 20%. That sounded made up, so I went home and did a side by side with frozen fries. One batch went in loose in a single layer, the other I piled up to use every inch of the basket. The crowded batch came out pale and limp in the middle even after 18 minutes at 400, while the loose batch was crispy in 12. Now I want to know if anyone has a trick for bigger batches, like cooking in two rounds and holding the first one warm in a low oven?
Oh man, same thing happened to me with chicken wings! I did one layer and they got nice and crispy in about 14 minutes, then I got greedy and stacked a double batch in there. Twenty five minutes later the ones on top were fine but everything underneath was soggy and kinda gray. Now I just do two rounds and toss the first batch on a sheet pan in the oven at like 200, works great and they stay crunchy. The two round thing adds maybe 15 minutes total but it beats eating sad wings.
